KALAMAZOO, Michigan – After much uncertainty during the pandemic that it should close for good, a restaurant in western Michigan reopened on Friday.
âIn mid-April, we decided we could figure it out,â said Julie Stanley, owner and executive chef of Food Dance Cafe.
After seven long, dark months, the Food Dance Cafe reopened on Friday.
It’s a decision owner Julie Stanley didn’t think was possible just a few months ago.
âWe were able to find the money through some P3 loans and the Restaurant Stimulus Fund. When we got that, we knew we had a way,â Stanley said.
Like many other businesses, changing restrictions and reopening and closing have been financially difficult, especially the way the restaurant is run. They place food orders from local vendors and cook most of their food from scratch.
âBecause we stopper, because we bake our own bread, because we make all our own pastries, because we manage a team of around 10 to 12 people at the back of the house, we cannot bring any back. some. it takes a whole team to do all of this work, âsaid Stanley.
With a new chef, the restaurant now offers new menu items alongside old favorites. The same goes for the staff, a mixture of the familiar and the unfamiliar.
The operation will be slightly smaller to keep the focus on good service.
âWe only open our main floor here. We have other seats in what we call our ballroom and our tangos. We don’t open them. We want to make sure that we have the level of service with which we we feel good before we do any kind of expansion, said Stanley.
After thinking they couldn’t reopen until now, Stanley said she hoped this was the last time they had to start over.
“We’re so happy to have so much support from our community so it’s really great. It’s going to be really great. We just have a way to go,” said Stanley.
Food Dance Cafe reopened Friday at 11 a.m.
